Quickish chicken Curry
Chop an onion and fry in butter until just about browned. Throw in a dessert spoon of flour and the same of your favorite curry powder. If you want HOT add some chilli powder. Stir for a few minutes and then add a chopped tomato and 3/4 pint of chicken stock. Boil it and then leave to simmer for 20 minutes. Season to taste. Either blitz or strain it if you don't like lumps. I leave it as it is. While that's simmering chop some skinless chicken breasts and fry until browned, then add them to them to the curry sauce to finish cooking, stirring occasionally. Serve with your favorite rice and garnish with chopped coriander. The whole thing shouldn't take you longer than 30 minutes. If I can do it in that time so can you. ENJOY
